Our farm is certified High Environmental Value (HVE). To achieve this, we minimize the use of phytosanitary products and apply organic fertilizers. In fact, the hundred hectares of meadows and crops on the farm have been certified Organic Agriculture since 2010. We also make use of techniques derived from geobiology and biodynamics.
We bottle them directly at the estate.

Fermentation is naturally protected through bioprotection, using non-fermenting yeasts to avoid sulfur additions. Cold stabilization at 5°C with gentle pump-overs enhances aroma precursors and texture. Aging on fine lees further shields the wine from oxidation and builds structure. Final bottling follows a slow, natural clarification and light filtration—preserving the wine’s freshness and integrity.
