Fermentation is naturally protected through bioprotection, using non-fermenting yeasts to avoid sulfur additions. The grape must is cold-stabilized, with gentle pumping over to enrich the wine with aromatic precursors and structure. It is naturally protected thanks to bioprotection, without added sulfur. Aging on fine lees allows for natural protection, limiting oxidation and strengthening balance. Bottling is done after gradual clarification and light filtration, to preserve the original freshness of the wine.
